
Potato Omelet with Toasted Bread
Serves 1
Ingredients
1 Egg
1 Potato - medium size, sliced & diced finely
2 Garlic Cloves – medium size, chopped finely
1 Red Onion – small size, chopped finely
2 Slices of whole wheat bread
50ml Fresh Milk
Pinch of salt
Pinch of paper
Olive oil/Coconut oil/Sunflower oil
Butter
DIRECTIONS
Butter one side of bread slices& keep aside.
Heat the pan over medium heat
Add a 1 tbsp of oil & let it heat.
Add diced potatoes and let it cook until it become tender.
Beat the egg with fresh milk, finely chopped garlic, red onion, fried potatoes & pepper until blended.
Add a pinch of salt.
Drizzle some oil in to the pan.
Pour in the egg mixture and spread using a wooden spatula.
Then put the lid on the pan.
Let it cook for 2 minutes over medium heat.
Flip the omelet & put the lid on the pan.
Take out the omelet from the pan after 1 minute.
Place the bread slice on the pan as buttered side down.
Bring the stove to low heat.
Let it toast for 1 minute in (Do not flip the sides)
Remove from the heat.
